Making the chocolate tartlet is easy and will definitely impress your guests.

First you need to make the chocolate pastry

What you need

  • 300g butter (unsalted)
  • 150g caster sugar
  • 300g plain flour
  • 200g cocoa powder
  • 2 free range eggs
  • 2 free range egg yolks

What you need to do

1. Cream the butter and sugar together in a large mixing bowl

2. add the eggs and yolks together to the mixture

3. Sieve the flour and cocoa powder and add to the now creamy mixture

4. Roll out between grease proof paper to required tartlet size.  Ideally a 10″ to 12″ case

5. Bake blind in the oven at 160• for approximately  10 to 14 minutes until lightly cooked

Now, you need the following ingredients to make the tartlet filling

  • 500g dark chocolate (higher the percentage the better)
  • 200g milk (semi skimmed)
  • 350g double cream
  • 3 whole free range eggs

 What you need to do

1. Melt the dark chocolate in a bowl either over a pan of boiling water or in the microwave on a low to medium setting, remembering to stir occasionally. It is important to not burn the chocolate at any stage otherwise the taste will be spoilt.

2. Boil the double cream and milk together in a pan

3. Add the eggs to the melted chocolate and then add this to to cream and milk mixture

4. Pour into baked blind tartlet case and cook at 110• for approximately 40 minutes.  It is really important to make sure the mix does not get too hot at this stage, as it will scramble.

5. Serve with creme fraiche, cream or if you are feeling adventurous you can make pistachio custard and sprinkle some burnt honeycomb to give added textures
