New Shellfish Cookery

Introduction to shell fish found around our coast line

  • How to prepare and cook your own crab plus a demo on lobster and langoustine cookery
  • How to prepare your fish for cooking
  • How to store fish and what quality points to look for when purchasing
  • How to increase the sustainability of the fish you buy
  • Then we will make two dishes
  • Dressed crab

  • How to make a fish stock and bisque

    Langoustines, simply with our own smoked garlic pesto

Lesson two

Introduction to shell fish (bi-valves) i.e. clams, scallops, razors and oysters

  • How to increase the sustainability of the fish you buy
  • How to store fish and what quality points to look for when purchasing
  • How to shuck oysters
  • How to make a fish stock

Then we will make two dishes

  • Oysters natural/ oyster Rockafeller

  • Spaghetti with clams

Lesson three

  • Introduction to shell fish (cephalopods), ie, squid, cuttlefish and octopus
  • How to store fish and what quality points to look for when purchasing
  • How to increase the sustainability of the fish you buy
  • How to prepare the fish for cookery

Then we will make two dishes

  • Salt and pepper breaded squid with chilli dip and coriander salad

  • Stewed octopus with herb tabbouleh
