Shellfish Cookery

This course is a must for shellfish lovers, giving you the chance to learn how to cook it beautifully every time. This day is designed to cover as many aspects of shellfish preparation and cooking and to inspire you to cook seafood in a variety of ways. The day is focused more on preparation with recipes discussed and cooked.

A fish classification worksheet and recipe book will be given out for all seafood lessons.

Lesson one

Introduction to shell fish

  • How to increase the sustainability of the fish you buy.
  • How to store and quality points when buying.
  • How to prepare your fish for cooking.
  • How to prepare and cook your own crab, demonstration of lobster and langoustine cookery.
  • How to make a fish stock bisque.

Then we will make two dishes

  • Dressed crab
  • Langoustines, simply with our own smoked garlic pesto

Lesson two

Introduction to shell fish (bi-valves) ie Clams, scallops, razors , oysters

  • Clams, scallops, razors , oysters
  • Quality points, of what to look for
  • How to shuck oysters
  • How to make a fish stock

Then we will make two dishes

  • Oysters natural/ oyster Rockefeller
  • Spaghetti with clams.

Lesson three

Introduction to shell fish (cephalopods), ie, squid, cuttlefish and octopus.

  • How to increase the sustainability of the fish you buy.
  • How to prepare the fish for cookery,

Then we will make two dishes

  • Salt and pepper breaded squid with chilli dip and coriander salad.
  • Stewed octopus with herb tabbouleh
  • How to increase the sustainability of the fish you buy.

Our finale seafood lesson is to create a fruite de mer.

Famous throughout France as a seafood platter, consisting of lobster, crab, mussels, oysters, longustine, salmon crevettes and clams.

  • How to prepare and cook your own crab, lobster, langoustine  mussels, oysters, salmon, crevettes, clams
  • Poaching the fish in a court bouillon
  • Dressings to go with the platter
  • Then after the lesson relax and have a glass of wine to compliment what you have achieved
